So, I tested a little bottle after the appropriate amount of time for the carbonation to build up and found the beer....  pretty flat.  :(

The 'master' brewers told me to shake the bottles and put it in a warm room (75 deg) for another 9 days and then re-check to see if that would activate the yeasts...

Guess we shall see...  Interesting process.
